The Cut operates in Irvine's West Park Plaza and centers its menu on handcrafted burgers prepared with an emphasis on elevated ingredients along with shareable plates designed for groups.

Owner Steve Kim launched the concept as a food truck in 2014 and now works with Chef Ryan to offer ten burger varieties that range from smashburgers to more elaborate creations.

"We stay true to the same principles from day one," owner Steve Kim said. "The quality of the product we use, the freshness of it, and then just hospitality." The signature forty-dollar burger features a sixty-day dry-aged ribeye patty while another notable option includes bacon relish.

Additional menu items encompass breakfast burritos and shareable plates such as bone marrow, providing options beyond standard burgers for different times of day.

"You can come and feel welcome, whether it's on a date night or whether it was for the corporate lunch or birthday party, or just with your family and your kids," Kim said. The restaurant runs happy hour specials Monday through Friday, offers free meals for children on Tuesday evenings and features wine promotions on Wednesdays.

"I truly feel blessed to be still here nine years later," Kim said. "It's all love. It feels like that pat on the back, like, 'Okay, what we do is impacting somebody in a positive way.'" The Cut remains open daily at 3831 Alton Parkway, Suite C.
